 s the bookend to the 7-week Training Series as it is more of a culmination
  of the concepts learned in the weeks prior.\n\nCourse Description\nOne im
 portant topic explained in this 5-day class is how to create a production 
 schedule for yeasted bread\, sourdough and viennoiserie items. This is a c
 rucial concept to understand to minimize food and labor costs\, and to ach
 ieve an efficient bakery operation. Students will work in groups during th
 e hands-on production time to construct their own production schedule depe
 nding on the product types and quantities. The production schedule will be
  based on essential items at bakeries such as country bread\, baguettes\, 
 ciabatta\, croissants\, cookies\, scones\, and muffins. Students will prod
 uce the above items in a practical exam as if to operate an actual bakery 
 production in the last few days of this series. We will have a conversatio
 n with bakery owners in the first half of this series. This is a great opp

 ays from 11am – 1pm PT\n\nIn this final semester of our “Portraits of 
 Christ” series\, Fr. Vincent will bring our extended study of Mark’s g
 ospel to its dramatic conclusion as we delve into an in-depth study of Mar
 k 14-16\, the earliest account of Christ’s passion in the New Testament.
  Written as one continuous narrative\, Mark’s account of Christ’s pass
 ion and death is rich with theology and literary ‘brush strokes’ uniqu
 e to Mark’s portrait of Christ as the “Suffering Servant.” As we wil
 l see\, it is precisely in his moment of death\, the moment the Eternal Wo
 rd is silenced\, that Jesus is at last recognized\, indeed proclaimed\, 
 “Son of God” (Mk. 15:39). Together we will explore the fateful moments
  leading up to the death of Christ\, and to the enigmatic way in which Mar
 k leaves us not so much with the ‘Hollywood ending’ of resurrection bu
 t with the stark\, indeed terrify\, confrontation with an empty tomb. We w
 ill meditate with Hans Urs von Balthasar\, how the Eternal Word becomes\, 
 in the very moment of death\, the“Unword” (German: Un-Wort)\, in a sel
 f-emptying of the flesh that surpasses all language and defies all theo-lo
 gic. For Mark\, the silence of the Cross becomes God’s greatest revelati
 on in Christ.\n\nA fitting end to an enigmatic text\, this semester will c
 onclude our exploration of Mark’s gospel as one that is as rich as it is
  compelling\, full of hidden mysteries\, messianic secrets\, and wisdom te
 achings that reveal far more theological depth than its brusque simplicity
  would suggest. This intimate analysis of Mark’s Passion Narrative will 
 explore its verses in fine detail through the interpretive tools of modern
  exegesis\, as we plumb its ancient message for the modern church. Especia
 lly designed for contemplatives\, this last in our series of classes is de
 signed to aid the Christian in the practice of Lectio Divina on Mark’s g
 ospel\, in ways that ground the life and practice of contemplative Christi
