 oduce the traditional koji fermentation process\, examining how it differ
 s from Western fermentation techniques that rely primarily on yeast. This 
 distinctive process contributes to a cleaner\, smoother distillate and pla
 ys a key role in shaping the character of many exceptional Japanese whiski
 es. \nThe program will also highlight the legacy of Jokichi Takamine\, a p
 ioneering chemist and biotechnologist who first isolated adrenaline and la
 ter introduced koji fermentation techniques to American distilleries\, bri
 dging Japanese and Western scientific practices. \nAs part of this experie
 nce\, participants will enjoy a curated tasting of koji-fermented whiskies
  from Ohishi\, Fukano\, Ikikko\, and Hakata. \n\n \nKevin Obis started hi
 s career in the beverage industry as a craft cocktail bartender\, honing h

  During his time there he grew to love and appreciate the simplicity of a

 ss to experiment. \nJoalida Smit is a Clinical Psychologist and Neuropsych
 ologist who lived and worked in London (UK) and Cape Town (SA) for the pas
 t 20 years. She pivoted to full time artist during COVID and now runs an a
 rt studio at The Gorton Center working on large scale canvases. Currently 
 she is exploring innovative ways to incorporate art in the psychology work
  of personal transformation.
