  butcher of Pine Street Market\, a whole animal craft butcher shop in Avon
 dale Estates\, Georgia. \nA graduate of the renowned Culinary Institute of
  America\, Rusty began his career as a classically trained chef. Working i
 n respected restaurant kitchens and fine dining restaurants from Jacksonvi
 lle\, Atlanta and Hawaii to Europe and the Middle East\, Rusty eventually 
 fell in love with the ancient art of whole animal butchery and charcuterie
 . \nRusty’s experiences abroad\, in particular\, had a profound effect o
 n his approach to creating good\, clean food. It wasn’t the techniques\,
  but rather the approach to food that struck a chord with him. \nIn Europe
 \, for instance\, there was more of a connection to the food that people b
 ought fresh from the local farmer or the butcher who practiced the time-ho
 nored traditions of whole animal butchery. This connection with food resul
 ted in people being more connected with each other and the community.  \n
 In 2008\, Rusty officially traded his chef’s coat for a butcher’s apro
 n and launched Pine Street Market\, a whole animal butcher shop specializi
 ng in the finest quality charcuterie\, artisan sausages\, and a variety of
  fresh cuts of locally-sourced\, humanely and sustainably raised pork\, be
 ef\, lamb and poultry hand-crafted in small batches.  \nRusty is also a p
 assionate educator. Using Pine Street Market as his base\, Rusty leads a s
 eries of popular hands-on classes ranging from whole hog butchery and saus
 age-making to curing your own meats\, as well as advanced butchering class
